Where to eat: Try lutefisk at Stortorvets Gjæstgiveri in Oslo during the winter season, or at Gamle Raadhus Restaurant, known for its historic ambience and traditional fare.

Brunost: Norway's Sweet Cheese

Brunost, or brown cheese, is made from caramelised whey and has a sweet, slightly tangy flavour. It’s typically sliced thin and served on bread or waffles.

Where to eat: You’ll find brunost in nearly every Norwegian home, but for a café experience, visit Kaffistova in Oslo or Vaaland Dampbakeri & Conditori in Stavanger, which also sells krumkake and other baked goods.

Pølser: The Norwegian Hot Dog

Norwegians love their pølser—sausages served in lomper (potato flatbread) and topped with everything from crispy onions to potato salad. It’s a go-to street food, perfect for a quick bite.

Where to eat: Grab one at Trekroneren in Bergen, famous for its reindeer sausage with juniper berries. 

Reindeer: Sámi Heritage on a Plate

Reindeer meat is a delicacy from Norway’s Arctic north, where the Indigenous Sámi people have herded reindeer for centuries. It’s served as finnbiff (a creamy stew) or roasted with lingonberry jam.

Where to eat: For a gourmet experience, book a table at Maaemo or Kontrast in Oslo—both Michelin-starred and known for showcasing Nordic ingredients. For a more casual option, Zupperia in Bergen serves “Rudolfsuppe,” a playful take on reindeer stew.

Krumkake: A Sweet Tradition

Krumkake are delicate waffle cookies rolled into cones and filled with cream, jam, or seasonal toppings. They’re often homemade but also sold at markets and bakeries.

Where to eat: Visit Vaaland Dampbakeri & Conditori in Stavanger for a taste of their 100-year-old krumkake recipe. During holidays and festivals, you’ll find them at stalls and fairs across the country.

Aquavit: Norway's Liquid Courage

Aquavit, meaning “water of life,” is a strong spirit distilled from grain or potatoes and flavoured with herbs like caraway and dill. It’s traditionally served with rich fish or meat dishes.

Where to drink: Most restaurants and bars serve aquavit, but for a curated tasting, try Himkok in Oslo—a cocktail bar that distills its own aquavit and ranks among the world’s best. Pair it with seafood at Lofoten Fiskerestaurant for a full Nordic experience.
